Overnight Oatmeal with Peanut Butter and Strawberries
Sometimes the best breakfasts are made from the simplest ingredients. This creamy overnight oatmeal with juicy strawberries, vanilla skyr, and peanut butter is filling, high in protein, and ready right after taking it out of the fridge. Just a few minutes of prep in the evening, and in the morning you can enjoy a delicious, healthy breakfast.
Method

Add the rolled oats to a bowl or jar and pour over the milk.

Mix thoroughly, cover, and refrigerate for at least 6 hours or overnight.

In the morning add vanilla Skyr yogurt and gently mix it with the oatmeal.

Wash the strawberries, remove the stems, and cut into halves or slices.

Arrange the strawberries on top of the oatmeal, and add the peanut butter in the middle.

Serve right away.
Tips
💡 If you like a creamier consistency, add 1–2 tablespoons of milk in the morning before mixing.
💡 You can use natural Skyr yogurt and add a little honey or maple syrup.
💡 Great with chia seeds, almonds, or chopped nuts.
